Made with just four simple ingredients (banana, coconut milk, peppermint extract, and chocolate chips) these 4 Ingredient Mint Chocolate Chip Popsicles are a great quick dessert to whip up for a refreshing summertime treat!

Instructions. Steep: Add coconut milk and sugar to a medium saucepan over medium/low heat. Heat until hot and steaming, but not boiling, stirring occasionally. Remove from heat and add mint leaves. Stir to combine and let mint leaves steep for 15 to 30 minutes. Fish out mint leaves and discard.

In a medium saucepan, combine unsalted butter and chocolate and cook over medium heat until melted and smooth, stirring often. Remove from heat and let cool for 10-15 minutes.

Instructions. In a medium pot, heat the salt, sugar, and coconut milk over a medium-low heat, stirring occasionally. Once the mixture is gently steaming take it off the heat and add the mint leaves. Set aside for 30 minutes. Place a strainer (sieve) over a medium bowl and pour the coconut milk mixture through it to remove all the mint leaves.

Add banana, avocado, spinach, mint, vanilla, and milk to a blender. Blend until completely smooth and no flecks of spinach remain. Stir in chocolate chips. Place sticks in the pops to freeze. Place the pops in the freezer for 5 hours or longer to freeze solid. When ready to serve, run the base of the molds under hot water briefly and while grasping the sticks, wiggle the pops out of the mold. Dip or drizzle the pops in to the Chocolate Magic Shell. To make Vegan Mint Chocolate Chip Popsicles: Add the non-dairy milk, coconut milk, sugar, and cornstarch to a medium sized pot and whisk well making sure the cornstarch is completely mixed it. Put over medium-high heat and bring to a simmer while whisking often. Simmer for about 5 minutes until the mixture thickens, being careful to not let it boil over.
