Looks like a lot of fines produced from the grind, and maybe too aggressive with the pour(s). Are you timing the extraction? I would shoot for consistency in extraction time (3:30) and dose (1:15 coffee to water), then play with the grind size. Also, I returned the Encore for the Virtuoso; much more consistent particle size with less fines.
