Basically, it's a sixth of dark dough and a sixth of light dough. Arrange dark on top of light. Roll up the two dough rectangles keeping the light on the outside. Pinch the seam closed and roll it over until the seam is on the bottom. Roll the dough log back and forth to help the pinched seam stay closed.

Pan-grill the sandwiches, melting the cheese. Preheat a griddle or frying pan to medium heat. Cook the sandwiches on one side until the bread is golden brown and the cheese is melted. Use a spatula to carefully flip the sandwiches over and finish cooking on the second side, about 3 minutes on each side. Cut the sandwiches in half before serving.

Layer the meat and cheese: Top the mustard side with a layer of Swiss cheese, followed by a handful of the warmed roast pork.
